            Quick Cooking β€œHoly Moly” Frijoles!

This is one of my favorite recipes for the beginning of a busy week. I make a large pot of it and the flavor just seems to get even better each day it sits.🀀
The quick cooking procedure is such a lifesaver since it reduces the pre-soaking to only an hour! Β I rarely ever remember to pre-soak my pinto beans overnight… but doing it this way still produces such delicious results.🧑

The amounts of each ingredient can just be adjusted to suit your specific taste - I am one of those people who prefer extra spicy and extra garlicky πŸ˜πŸ§„πŸŒΆ. This version is also meatless, but feel free to add that as well in yours!

Ingredients:
🌢2lbs dry Pinto Beans
🌢1TBS Chicken Bouillon (I use β€˜Better than Bouillon’)
🌢1 White Onion
🌢2 Jalapeños
🌢2 Bulbs of Garlic (I have been known to use 3πŸ˜‚)
🌢Bunch of fresh Oregano
🌢Heaping TBS of Cumin
🌢Salt & Pepper

Quick Soaking Method:

🧑In a large saucepan or dutch oven add your 2lbs of pinto beans, a couple TBS Salt, and approx 16 cups of water (you can always add more if you see it being soaked up), stir to dissolve.

🧑Bring to a boil for 2 minutes.
Turn off heat and cover the beans for 1 hour of soaking.

🧑Drain and rinse the beans before cooking.

Cooking Beans:

🌢In a large saucepan or dutch oven, add your pre-soaked beans, and enough water to cover close to about an inch higher than beans (I start with that and add more water if needed)

🌢While water is heating I chop up and add everything else…

🌢Add in TBS of chicken Bouillon, quartered white onion, 2 whole JalapeΓ±os (I slice the tops off), whole cloves from 2 bulbs of garlic (adjust amount of garlic to suit you, I love it garlickyπŸ§„β™₯️), nice big bunch of chopped fresh Oregano and heaping TBS of Cumin. Β 

🌢Bring water to a simmer over medium-high heat. Cover and reduce heat to low. Stir your beans occasionally to make sure they don’t stick to the bottom of the pot, about every 30 minutes.

🌢When Jalapeños have softened, I pull them out, chop up and throw them back in along with seeds!

🌢Gently cook beans over low heat until tender and creamy, about 60 to 90 minutes.   Taste it and adjust your seasoning if needed.  I always wait till this point to add my salt & pepper.

Yummy!!! Β Store them in the fridge and enjoy the flavors getting even better as they get to know each other in the pot over the next several daysπŸ˜‰πŸ§„πŸŒΆ Β Β
